T-XIV Cofields SPARKLING PINOT NOIR CHARDONNAY

Technical details

Variety: 70 %Pinot Noir, 30%Chardonnay, Tumbarumba region, NSW

Wine Analysis: 12% Alc content

Production: The 2005 fruit was whole bunch pressed and then the juice was oxidised to drop out the colour and phenolics. A cool ferment followed and the 2005 base wine was then blended with a percentage of our Sparkling Base Solera. The wine was then tiraged (bottle fermented) in July 2006, spending 9 months on lees before being disgorged in April 2007.

 

Tasting Notes

Colour: Pale gold straw, with a fine bead

Nose: Citrus notes with hints yeast nuances

Palate: Green apple and lemon; a hint of yeasty complexity and a creamy mouth feel.

T-XV Cofield SPARKLING SHIRAZ

Tasting Notes

Colour: Deep purple with  crimson edges and with a fine bead

Nose: Intense blackberries with layers of chocolate and cherries

Palate: Rich up front fruit of blackberries and dark chocolate with hints of spice. A full mouth-feel and a long finish.

2006 Cofield MARSANNE VIOGNIER

Technical details

Variety: 66% Marsanne fruit, 34% Viognier, Rutherglen ,VIC

Wine Analysis: 12.7% Alc content

Production: The Marsanne fruit (66%) is from old vine Marsanne vines in Rutherglen which are hand picked at high ripeness to achieve a full mouth-feel. The Viognier fruit (34%) is from younger vines, also in Rutherglen and was picked at a ripeness level to ensure balanced acidity in the final wine. Both parcels received partial barrel ferment to bring out fullness and spent 6 months in barrels with weekly lees stirring prior to blending, filtering and bottling.

 

Tasting Notes

Colour: Bright straw yellow

Nose: Ripe pear with hints of apricot and vanillan oak.

Palate: Full bodied and dry with a palate of pears, apricots and balanced by oak complexity.

2005 Cofield SANGIOVESE

Technical details

Variety: Sangiovese, Rutherglen, VIC

Wine Analysis: 14.2% Alc content

Production: With the judicious use of some excellent new, 1 & 2 Y.O French Barriques & by blending a small amount of ripe Cabernet Sauvignon to help enhance fruit & tannin characters, we are able to produce a wine of greater complexities & depth of flavours.

 

Tasting Notes

Colour: Cherry red with a violet rim.

Nose: Spiced cherries, plums & vanilla beans with a subtle lavender floral note.

Palate: Savoury cherries, spiced raspberries & blood plums layered on fine tannins & spiced oak.

NV Cofield RESERVE MUSCAT

Technical details

Variety: Muscat, Rutherglen, VIC

Wine Analysis: 17.5% Alc content

 

Tasting Notes

Colour: Burnt Sienna & burnished copper.

Nose: Lifted & aromatic with peanut brittle, rose petals, golden fruit-cake and old oak.

Palate: Caramelised orange peel, mixed dried fruits, figs & iced-tea on the finish. A supple elegance balances a warm & friendly palate.

Food: Luxurious with crème brulee or when served over vanilla ice-cream

2008 Cofield DURIF

Technical details

Variety: Durif, Rutherglen, VIC

Wine Analysis: 14.9% Alc content

Production: The fruit for this wine was picked at 14.3º Beaume and 14.8º Beaume from two Rutherglen Vineyards. The must was tank fermented to ensure full-fruit flavours resulted. 25% was then matured in 1-year-old French oak with the remaining 75% maturing in older barrels for six months, before blending, filtering and bottling.

 

Tasting Notes

Colour: Deep inky purple.

Nose: Vibrant black berry fruit and stewed raspberries, with a hint of dark chocolate.

Palate: A full-bodied style with rich black fruit characters, and firm, gripping tannins.
