Haan CHANTICLEER SPARKLING CABERNET NV

Technical details

Variety: Cabernet Sauvignon

Production: Rose sparkling wines are rare enough, but even more so when made from Cabernet Sauvignon.

A lively wine with quite noticeable florals and a tiny touch of Cabernet leafiness. The colour is dusky rose and being from cabernet will tend to hold its brilliance much longer than other red varieties.

Chanticleer is made sparkling in the traditional bottle fermented method after ageing on lees. Only small quantities are disgorged at any one time to enable the longest time on lees.

 

Tasting Notes

Palate:Truly a magnificent aperitif which is quite flavoursome to the degree it can be enjoyed with more traditional dishes as well as finger-foods.

 

2006 Haan VIOGNIER PRESTIGE

Technical details

Variety: 100% Viognier Barossa Valley

 

Production: The fruit is hand selected from inside the canopy where all the berries have not seen the sunlight and are still green in colour. No exposed fruit is picked into this wine. The fruit is whole bunch pressed to retain the maximum flavour and texture without the added phenolics. Extraction rate was only 500 litres per tonne and no hard pressings were used.

The wine was fermented with a high glycerol producing yeast and allowed to spend all its time on yeast lees. One barrique of light toast Troncais was filled directly after fermentation ceased and added back prior to stabilisation.

 

Tasting Notes

Palate: Sheer varietal power but with great beauty in the depth of flavour, length of palate, clearness of the honeysuckle varietal signature, all this in balance and with ample texture.  The finish has abundant fruit but finishes so softly, dry, and with clean light acidity. As such the quantity is small, for the quantity of fruit inside the canopy is far less than that on the outer.

 

2004 Haan WILHELMUS

Technical details

Variety: This wine is based on the old wine saying that "the blend is greater than any of its parts". Using five classic varieties (Cabernet Sauvignon 38%, Merlot 24%, Cabernet Franc 22%, Malbec 10%, Petit Verdot 6%)

 

Production: Each variety is picked at its own distinct maturity so maximising the flavour. Individual oak selection is tailored for each variety and matured as separate parcels. A detailed blending exercise is undertaken to bring about the desired complexity in the finished, blended wine.

 

Tasting Notes

Aroma: There is a distinct fresh berry aroma with herbal overtones and an underlying smokey, dusty oak character. Palate:  Dominated by upfront plum fruits and soft silky tannins. The generous mouthfeel is dominated by complex spices and herbs.

This wine is aged in selected French oak barriques for 24 months, which imparts a fine grain tannin structure and length.

To fully appreciate this wine, we recommend that it be decanted 3 to 4 hours before serving

 
2004 Haan MERLOT PRESTIGE

 

Technical details

Variety: 100% merlot Barossa Valley SA

Production: This wine was fermented using a selected yeast to enhance fruit definition and depth. The skins were plunged and pumped over three times per day and allowed to rest on skins for seven days to allow for maximum colour and flavour extraction. After malolactic fermentation the wine was racked into barriques, 30% of which were new, and the wine allowed to mature for 24 months before bottling.

 

Tasting Notes

Aroma: This wine exhibits richness with a powerful concentration of plums, blackcurrants and spicy chocolates.

Palate: This is mirrored in the up-front fruit on the palate, which gives depth and weight to the wine. A silky tannin structure from the natural fruit and oak maturation ensures the longevity of the wine.

To fully appreciate this wine, we recommend that it be decanted 3 to 4 hours before serving.

 

2004 Haan SHIRAZ PRESTIGE

Technical details

Variety: 100% Shiraz Barossa Valley SA

Production: Recognising the importance of the European use of Viognier in Shiraz, we have since the 2000 vintage followed this traditional step. We find our Viognier lifts the mid palate fruit and opens up the whole structure, adding yet another enjoyable complexity to Shiraz Prestige.

 

Tasting Notes

Colour: This iconic Barossa Shiraz exhibits a deep red colour indicative of its richness.

Aroma:  The aroma reinforces the colour with strong spicy fruit and subtle smokey oak flavours.

Palate:   The intense generosity of the palate is dominated by blackberry fruit and black pepper spice. The long aging in oak imparts soft, silky tannins and a firm structured finish.

Released with 24 months wood and bottle age, this wine will continue to improve over the next 5 to 10 years under good cellaring conditions. It will certainly reward those who are patient, but this classic style will also be enjoyed by those who cannot resist the immediate temptation.
