Technical details
Variety:
Each Cuvée comprises 50% of the current vintage (Cuvée
VII is 50% from 1996) and the balance is reserve wine
from 1995 back to 1987. After some two years of
maturation in barriques the wine is then blended. The
blend is approximately 60% Pinot Noir and 40%
Chardonnay., Macedon, VIC
Wine Analysis: 12.5% Alc.
Tasting Notes
The palate starts with fresh apple-like characters,
moving to an intense and
complex middle of bready/biscuity characters,
reminiscent of Bollinger, and very good acidity
stretches out the long, lingering finish.
The wine should be enjoyed with food, as it is an
excellent ‘food wine’.

Tasting Notes
This release was bottled in March 2004. After
forty-four months on yeast lees in the bottle, with the
second fermentation complete, the bead had become fine
and the
flavour had developed unmistakeable length due to the
yeast autolysis in the bottle. Disgorgement commenced in
October 2007, with absolutely minimum liquering (only
2g/l) and with minimal SO2. Undoubtedly it will be
described as a rich wine. The palate is simultaneously
full flavoured and yet dry; crisp, yet balanced. In
short it is the wine of our dreams - a great Australian
sparkling wine! |

Commended’ awards as a barrel sample at the 2002
Ballarat Wine Show (‘Very Highly Commended’ for a barrel
sample is the equivalent of a Gold Medal awarded to a
bottled wine)

Production: This is the second vintage to make
use of new, ‘steam-bent’, medium toast, American
oak barriques that engender a smoother, subtler oak
character in the wine, and with less vanillan
influences. The wine was matured in this oak for
eighteen months. Our Heathcote fruit is always picked on
flavour, and in this aspect of the wine we are aiming
for consistency. The new oak is subtler, smoother and
more integrated, the fruit characters are more
prominent. It is a rich, elegant wine, beautifully
balanced and with great cellaring potential.
Tasting Notes
Colour: The colour is deep, intense
purple/mulberry
Nose: The nose exhibits elegant, plum/berry
aromas with a gentle oak presence and some mintiness.
Palate: On the palate it has a silky texture,
complexity, delicious plummy berry flavours and a good
balancebetween the fruit, oak and tannin.

in this aspect of the wine we are aiming for

is a rich, elegant wine, beautifully balanced and with
great cellaring potential.
Tasting Notes
Colour: The colour is an intense deep purple/mulberry.
Nose: The nose
exhibits powerful, savoury and cigar box notes with
nuances of unmistakable Heathcote mintiness.
Palate: The palate is rich and powerful with a tight and vibrant
structure. The flavours are that of dark chocolate and
eucalypt, with mulberry and blueberry overtones.

Colour: The colour is a rich, dark purple/plum hue.
Nose: The nose
is simultaneously fragrant yet pungent; full of mulberry
and plum aromas with an underlying trademark Heathcote
white pepper character.
Palate: The palate exhibits intense berry and cigar box
flavours, underpinned by an elegant structure which is
due in no small part to the lower alcohol level derived
from this cooler than usual vintage. The hallmark
structure, tannin backbone and length we have come to
expect from this wine is clearly evident in the 2004
vintage.

Tasting Notes
This wine is made in a traditional style: it is quite
rich and full bodied, with a smooth, rounded texture.
Colour: The colour is deep straw.
Nose and Palate: The nose and palate are
distinctively varietal, showing flavours such as
honeysuckle and blossom with a hint of almonds.
This wine goes very well with seafood (especially
shellfish and firmer flesh fish) and pasta with creamy
sauces.

Production: The final make-up of
Cambrian Rise is inextricably linked to the composure of
our flagship red wine - ‘Hanging Rock Heathcote Shiraz’.
Our flagship Shiraz is always predominantly made with
fruit from our ‘Athol’s Paddock’ vineyard. And,
depending on the vintage, may include additional fruit
from any, or all, of the group of other Heathcote
vineyards contracted to grow for us. The fruit that does
not suit our requirements for the final flagship Shiraz
blend immediately becomes available for Cambrian Rise.
Our winemakers then have the challenge to make our next
best possible Heathcote Shiraz wine.
Hence the tag, ‘Son of Heathcote’.
Cambrian Rise will always include components from a
number of Heathcote Shiraz vineyards, and its
composition will vary from vintage to vintage.
2004 was the peak of the drought and yields were down in
this cooler than usual vintage. We were able to achieve
our desired flavour and ripeness levels at around 13 -
13.5% compared with the 14 - 15% levels occuring in
recent vintages.
Tasting Notes
Colour: Deep red with a Cherry red and
slightly blue hue.
Nose: Dark Cherries and dark Chocolate with a
hint of eucalypt and white pepper.
Palate: Dark Cherries and Mulberries well
integrated with the steam bent American oak. The wine
finishes on notes of ripe berries and savoury flavours
that last.

2007 Hanging Rock JIM JIM SAUVIGNON BLANC

Wine Analysis: 12.0% Alc.
Production:
The wine is made by picking the fruit in 3 stages,
some a little under ripe (providing
a great acid backbone), some at perfect ripeness and
some a little over ripe (which provides some tropical
fruit flavours). 10% of the wine is then barrel
fermented for 2 weeks in new French oak to add some
complexity to the wine, the rest is fermented and stored
in tank until time for bottling. The grapes were pressed
as whole bunches to give a juice of high clarity and
little phenolic extraction, and then cool fermented in
stainless steel. To preserve varietal character, the
wine was bottled as soon as possible after completion of
the fermentation.
Tasting Notes
Colour: Pale straw with green tinge, will
intensify with ageing.
Nose: A mixture of grassy and herbaceous notes
with honey dew melon and some flinty characters.
Palate: This wine shows layers of complexity. It
has both a minerality and herbacousness complemented by
a round, lush texture through to a clean, crisp finish

Tasting Notes
Colour: Pale- mid Straw
Nose: Lemon and Citrus notes with a hint of
perfume and flowers.
Palate: Mouth filling burst of flavour. The lemon
characteristic carries through to the palate. The
texture of the wine is quite smooth and buttery but with
a fantastic acid back bone, and a long finish.

2004 Hanging Rock THE YIN BARUN MERLOT CABERNET
FRANC

Mixture of Merlot and Cabernet Franc, with the numbers
slightly in favour of Merlot, Swanpool VIC
Wine Analysis: 14.5% Alc.
Production: The grapes were picked and
fermented together and the wine was aged in new and
one-year-old French and American oak barriques for 22
months prior to bottling in July 2006.
Tasting Notes
Typically Merlot-soft, this richly flavoured wine has
lifted nose with subtle spicy floral characters, ripe
plum flavours on the palate and fine smooth tannins
through to a long finish.
The Yin Barun could be as close as we can get to
Bordeaux while still in the shadow of Hanging Rock
itself.

2007 Hanging Rock JIM JIM PINOT GRIS

Production: This wine has spent some
time in old oak The result is a well balanced wine with
a hint of added palate weight from the old oak
influence.
Tasting Notes
Colour: A touch of Pinot Gris skin colour in
addition to the traditional mid straw.
Nose: Honey suckle, with Nashi pear and custard
apple. There is also an underlying herbaceous note to
the wine.
Palate: Great minerally acid to fruit balance
which provides the wine with a wonderful structure and
prominent pear and apple characters. Generous and soft
on the front palate, a firm acid backbone structure
carries the fruit all the way through to a very long,
crisp finish.
The wine is refreshing, with a slightly rounded,
textural mouth feel.

2005 Hanging Rock KILFARA PINOT NOIR

100% Pinot Noir, Bendigo VIC
Wine Analysis: 14.0% Alc.
Production: To recreate the older methods,
using fully ripened grapes, we add a much larger than
normal dose of sulphur dioxide to crushed and partially
(about 40%) destemmed grapes, which are then
refrigerated and held at zero celcius for about one
month. No fermentation occurrs, but the juice develops
an excellent richness of colour and flavour. Our usual
pure yeast is added after we warm the juice, and
fermentation is allowed to proceed, without cooling. The
ferment is plunged twice a day, and on completion is
pressed and then our usual methods take over.
Tasting Notes
Colour: Medium intensity garnet, slight purple
tinge.
Nose: Rich and full, gamey. Overtones of
beetroot, leather and spice.
Palate: A medium bodied wine with intense
varietal character and excellent palate structure.
Tannins are soft and round but clearly evident.
