Production: The key to this blended style is
the careful harvesting of the individual varieties at
optimum maturity. This wine was fermented under
controlled temperatures barrel Maturation then took
place in small French and American oak casks for 16
months.
Tasting Notes
Colour: Deep Crimson
Nose: Spicy complexity with white chocolate
andblueberries, with a hint of gaminess.
Palate: Medium weight, soft, lovely fruit
flavours flowing through the length of the palate, with
soft dusty
tannins adding the finishing touch.
Food: Serve with Roast beef and lamb shanks |

Production: This wine was made from optimally
harvested fruit. The wine was fermented for 7 days under
controlled temperatures in a combinationof rotary and
static fermenters. Maturation in small French and
American oak casks for 16 months has assisted in the
developmentof a wine that shows vibrant richness and
attractive fruit flavours.
Tasting Notes
Colour: Attractive dark medium colour with good
purple.
Nose: Aroma Concentrated aromas of dark ripe
berries, classic blackcurrant, and sweet mulberry and
subtle cassis.
Palate: Excellent varietal fruit. Vibrant and
rich on the palate with a great combination of berry
fruit and refined
nutty oak. A stylish example of Coonawarra Cabernet
Sauvignon.
Food: Serve with Roast Lamb, Venison, Eye

controlled temperature for 7 days with part barrel
fermentation to enhance complexity. Maturation in small
French and American oak casks for 16 months has assisted
the
development of the rich characters of the Cabernet
Sauvignon fruit, producing a vibrant rich wine with
attractive fruit and oak flavours.
Tasting Notes
Colour: Deep purple
Nose: Attractive perfumed varietal characters
of violets and autumn leaf.
Palate: This palate is dominated by generous
fruit with a concentration of ripe black berry fruits
and has great
depth and persistence. It will take time to develop
and show its full potential.

Production: This wine was fermented for 7 days
on skins under controlled temperature. A portion of the
wine was barrel fermented to integrate the fruit and
enhance complexity. Maturation in small French and
American oak barrels for 16 months producing a vibrant
rich wine with attractive fruit flavours.
Tasting Notes
Colour: Attractive Purple
Nose: Plums, violets, vanilla and cedar oil
with attractive roasted coffee bean characters.
Palate: Full bodied, chocolate and spicy,
strong chalky tannins, good length and balance with
fruit sweetness
on the finish.
Food: Serve with Beef fillet and Roast duck |

Colour: Good dark medium colour with good
purple
Nose: Ripe spicy fruit and subtle nutty oak
characters.
Palate: Sweet fruit flavours with touches of
plum, raspberry and black pepper supported by
attractively integrated
oak which generates complexity. A further attraction is
the persistent mocha and ripe dark fruit after flavour.

attractive fruit flavours.
Tasting Notes
Colour: Dark medium crimson colour
Nose: Attractive perfumed varietal characters
of violets and autumn leaf.
Palate: Fruit dominant and full flavoured, the palate
is clean and long with good balance. The wine is
essentially fruit driven with only subtle use of oak to
enhance the fruit flavours and give a well rounded wine.
Food: Serve with Antipasto and poultry |
